Tunisian Pecorino Tagine
A rich and flavorful North African stew made with pecorino cheese, mildly seasoned with tunisian spices.
Ingredients
- β2 tsp tunisian spice blend
- β1/2 cup, crumbled pecorino cheese
- β1 can mildly seasoned chickpeas
- β2 tbsp olive oil
- β1 medium, chopped onion
- β3 cloves, minced garlic
- β1 medium, sliced tagineTunisian eggplant
- βto taste salt
- βto taste black pepper
- β1/4 cup velvety yogurtOptional
Instructions

Heat 1 tbsp of olive oil in a large skillet over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the sliced tagine and cook until tender, about 5 minutes.

Stir in the tunisian spice blend and cook for 1 minute.

Add the crumbled pecorino cheese and stir until melted and well combined.

Add the canned chickpeas and stir to combine.

Season with salt and black pepper to taste.

Serve hot, garnished with velvety yogurt if desired.
