Thai Red Curry Fish
A spicy Thai-inspired dish featuring snapper in a flavorful red curry sauce.
Ingredients

- ●2 tbsp Red Curry Pasteadjust to taste
- ●2 tbsp Coconut Oilfor sautéing
- ●1/4 cup Lime Juicefreshly squeezed
- ●1 tsp Fish Sauceadjust to taste
- ●1/4 cup Thai Basilchopped
- ●1 Red Bell Peppersliced
- ●1 Thai Red Chilisliced

Preheat oven to 400°F (200°C).

Season snapper fillets with salt and pepper.

Heat coconut oil in a skillet over medium-high heat.

Sear snapper fillets for 2-3 minutes per side, then transfer to a baking sheet.

In the same skillet, add red curry paste and sauté for 1-2 minutes.

Add lime juice, fish sauce, and Thai basil to the skillet. Stir to combine.

Add sliced red bell pepper and Thai red chili to the skillet. Cook for an additional 2-3 minutes.

Place the skillet with the sauce over the snapper fillets in the oven.
