Peruvian Vegan Rice Pilaf
A flavorful and aromatic Peruvian-inspired rice pilaf, made vegan-friendly with the addition of some key spices and herbs.
Ingredients
- β1 cup moist riceshort-grain rice works best
- β1 cup peruvian riceshort-grain rice works best
- β2 cups pilafvegetable or chicken broth works
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 tsp cuminground
- β1 tsp corianderground
- β1/2 tsp salt
- β1/4 tsp pepper
- β2 tbsp chopped fresh cilantro

Heat oil in a large saucepan over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the rice and stir to coat with oil and mix with onion and garlic.

Add the pilaf and stir to combine.

Add the cumin, coriander, salt, and pepper. Stir to combine.

Bring the mixture to a boil.

Reduce heat to low, cover, and simmer for 20-25 minutes or until the liquid has been absorbed and the rice is tender.
