Ingredients
- β1 pound Beef chuckCut into 1-inch cubes
- β1 medium OnionChopped
- β2 medium CarrotsSliced
- β2-3 medium PotatoesSliced
- β2 tablespoons All-purpose flourTo thicken
- β2 cups Beef brothHomemade or store-bought
- β1 cup Red wineOptional
- β2 sprigs Fresh thymeFresh or dried

Season the beef with salt and pepper.

In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat.

Brown the beef in batches, then set aside.
