Vietnamese Cod Poached in Com Tam Broth
A delicate Vietnamese dish featuring cod poached in a flavorful com tam broth, served with steamed com and a side of tender tam.
Ingredients
- β4 cod filletsfresh, 6 oz each
- β4 cups com tam brothstore-bought or homemade
- β2 tbsp moist fish sauceadjust to taste
- β1 cup tender tamcut into bite-sized pieces
- β2 cups comfor serving
- βto taste salt
- βchopped fresh cilantrofor garnish
Instructions

Bring the com tam broth to a boil in a large pot.

Reduce heat to a simmer and add the moist fish sauce.

Add the cod fillets to the pot and poach for 8-10 minutes, or until cooked through.

Remove the cod from the pot and place on a plate to rest.

Add the tender tam to the pot and cook for an additional 2-3 minutes.

Season the com tam broth with salt to taste.

To serve, place a cod fillet on top of a bed of steamed com, and spoon the com tam broth over the top.
