Goat Cheese Empanadas
A venezuelan-inspired comfort food dish featuring melted goat cheese inside crispy empanada pastry.
Ingredients
- β1 1/2 cups all-purpose gluten-free flour
- β1/2 cup warm water
- β1 cup, crumbled goat cheese
- β1/2 cup, finely chopped onion
- β1 tsp cumin
- β1/2 tsp salt
- β1/4 tsp black pepper
- β1/4 cup vegetable oil

1. Preheat oven to 375Β°F (190Β°C).

2. In a large bowl, combine flour, water, and a pinch of salt. Mix until dough forms.

3. Knead dough for 5 minutes until smooth. Cover with plastic wrap.

4. Divide dough into 8 equal pieces. Roll each piece into a ball.

5. Flatten each ball into a disk. Place a tablespoon of goat cheese in the center of each disk.

6. Fold the dough over the filling, forming a half-circle. Press edges together to seal.

7. Brush tops with vegetable oil. Bake for 20-25 minutes, or until golden brown.
