Traditional Ethiopian Stew

- β1 pound lamb shouldercut into 2-inch pieces
- β2 tablespoons berbere spice
- β2 cups stew
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 medium tomatochopped
- β2 inches gingergrated
- β2 tablespoons olive oil

Instructions

Heat oil in a large Dutch oven over medium heat.

Brown the lamb pieces on all sides, about 5 minutes.

Add onion, garlic, and ginger, and cook until the onion is translucent.
