Irish Pea Gratin
A creamy, cheesy gratin made with Irish peas and a hint of sweetness.
Ingredients

- β1 cup gratin
- β1 cup milk
- β2 tablespoons butter
- β2 tablespoons all-purpose flour
- β1 cup grated cheddar cheese
- β1/4 teaspoon salt
- β1/4 teaspoon black pepper

Preheat the oven to 375Β°F (190Β°C).

In a large saucepan, combine the Irish peas, milk, and butter. Bring to a simmer over medium heat.

In a small bowl, whisk together the flour and a splash of the hot pea mixture to make a slurry.

Add the slurry to the saucepan and stir to thicken the mixture.

Stir in the grated cheddar cheese until melted and smooth. Season with salt and pepper to taste.

Transfer the mixture to a 9x13-inch baking dish and top with additional grated cheese if desired.

Bake for 20-25 minutes, or until the top is golden brown and the gratin is bubbly.
