- β8 oz Uruguayan cheeseor similar type of cheddar or mozzarella
- β8 oz Molten mozzarellashredded and melted
- β1/4 cup Gratin breadcrumbsfor topping
- β2 tbsp Olive oilfor brushing aubergine
- βto taste Saltfor seasoning
- βto taste Black pepperfor seasoning
- β1/4 cup Fresh parsleychopped (optional)

Instructions

Preheat oven to 375Β°F (190Β°C).

Cut the roasted aubergine into 1-inch slices.
