Galangal and Monsoon Jjigae Bap
A spicy Korean-inspired dish made with galangal, monsoon sauce, and marinated ingredients, served with a side of crispy bap.
Ingredients
- β2 inches galangalgrated
- β2 tbsp monsoon saucestore-bought or homemade
- β4 slices marinated bapstore-bought or homemade
- β1/4 cup green onionschopped
- β1 tsp toasted sesame seedsoptional
- β1 tsp gochujangKorean chili paste
- β1 tsp soy sauceoptional
- β1 tsp rice vinegaroptional
- βto taste crushed black pepper
Instructions

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add the grated galangal and cook for 1-2 minutes until fragrant.

Add the marinated bap slices and cook for 2-3 minutes until crispy.

Add the monsoon sauce and gochujang, and stir to combine.

Add the green onions and toasted sesame seeds (if using), and stir to combine.

Season with soy sauce and rice vinegar (if using) to taste.

Cook for an additional 1-2 minutes until the sauce has thickened.

Serve immediately with additional monsoon sauce and green onions on top.
