Moroccan Chicken Tagine
A hearty and flavorful Moroccan chicken dish made with chicken, spices, and couscous. Perfect for a weeknight dinner.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β2 tablespoons Moroccan spice blendavailable at most supermarkets
- β1 cup couscouspreferably whole wheat
- β2 tablespoons olive oilextra virgin
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup dried apricotschopped
- β2 cups chicken brothlow sodium
- β1/4 cup royalchopped

Heat the oil in a large Dutch oven over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Add the Moroccan spice blend and cook for 1 minute.

Add the couscous, apricots, and chicken broth. Stir to combine.

Bring the mixture to a boil, then cover and transfer to the oven.

Bake at 375Β°F (190Β°C) for 25-30 minutes, or until the chicken is cooked through and the couscous is tender.

Stir in the chopped royal and serve hot.
