Eastern Chicken Stir Fry
A flavorful and quick stir-fry dish that brings together the best of middle eastern and Asian cuisine
Ingredients
- β1 pound Chicken Breastcut into bite-sized pieces
- β2 teaspoons Middle Eastern Spice Blendavailable at most grocery stores
- β2 tablespoons Coconut Oilfor stir-frying
- β1 medium Onionsliced
- β1 medium Bell Peppersliced
- β1 cup Snow Peasfresh
- β1 tablespoon Gingergrated
- β1 clove Garlicminced
- βto taste Saltoptional
- βto taste Black Pepperoptional
Instructions

Heat 1 tablespoon of coconut oil in a large skillet or wok over medium-high heat.

Add the chicken to the skillet and cook until browned and cooked through, about 5-6 minutes.

Remove the chicken from the skillet and set aside.

Add the remaining 1 tablespoon of coconut oil to the skillet.

Add the sliced onion and bell pepper to the skillet and cook until tender, about 3-4 minutes.

Add the snow peas to the skillet and cook until tender, about 2 minutes.

Add the grated ginger and minced garlic to the skillet and cook for 1 minute.

Return the chicken to the skillet and stir in the middle eastern spice blend.

Season with salt and black pepper to taste.
