Norwegian Cod Curry
A delicious and flavorful Norwegian-inspired curry made with cod and a blend of spices.
Ingredients
- β4 Cod filletsFresh or thawed
- β2 tsp Curry powderNorwegian-style curry powder
- β2 tbsp Olive oilFor frying
- β1 OnionChopped
- β3 cloves GarlicMinced
- β1 tsp GingerGrated
- β2 tbsp Tomato pasteFor added depth
- β1 cup Chicken brothLow-sodium
- β1/4 cup Heavy creamOptional
- βto taste SaltNorwegian sea salt
- βto taste Black pepperFreshly ground
Instructions

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and ginger, and cook for an additional 1-2 minutes.

Add the cod fillets and cook for 2-3 minutes per side, or until cooked through.

Remove the cod from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil.

Add the curry powder and cook for 1-2 minutes, or until fragrant.

Add the tomato paste and cook for an additional 1-2 minutes.

Add the chicken broth and bring to a simmer.

Return the cod to the skillet and cook for an additional 2-3 minutes, or until the sauce has thickened.

If desired, stir in the heavy cream to add a rich and creamy texture.
