Caramelized Mushroom Salad
A simple and flavorful salad featuring caramelized mushrooms, roasted chestnuts, and fresh greens.
Ingredients

- ●1/2 cup caramelizedsee notes section
- ●1/2 cup chestnutroasted and chopped
- ●4 cups mixed greenssuch as arugula, spinach, and lettuce

Preheat oven to 400°F (200°C).

Toss the chestnuts with 1 tablespoon of olive oil and roast in the oven for 15-20 minutes, or until tender.

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown.

Add 1 tablespoon of butter to the skillet and continue cooking the mushrooms until they are caramelized, stirring occasionally.

In a large bowl, combine the mixed greens, roasted chestnuts, and caramelized mushrooms.
