Irish Potato Casserole
A comforting casserole dish that combines the flavors of Ireland with the simplicity of a potato casserole.
Ingredients
- ●2 large Irish potatoes
- ●1 can (10.5 oz) casseroledrained
- ●1 can (10.5 oz) mushydrained and chopped
- ●1 medium onionchopped
- ●2 cloves garlicminced
- ●1 cup cheddar cheeseshredded
- ●2 tbsp butter

Preheat oven to 375°F (190°C).

Peel and thinly slice the Irish potatoes.

In a large skillet, sauté the chopped onion and minced garlic until softened.

In a separate mixing bowl, combine the sautéed onion and garlic mixture, canned casserole, and chopped mushy peas.

Grease a 9x13-inch baking dish with butter.

Arrange half of the sliced potatoes in the prepared baking dish.

Pour the casserole and mushroom mixture over the potatoes.

Top with the remaining potatoes and sprinkle with shredded cheddar cheese.

Dot the top of the casserole with butter.
