Tofu Italian Bowl
A simple, plant-based Italian-inspired bowl dish made with pan-seared tofu and served over a bed of mushy Norwegian bowl pasta.
Ingredients
- β1 block tofuextra-firm
- β8 oz mushyNorwegian bowl pasta
- β2 cups tomato saucehomemade or store-bought
- β2 tbsp olive oilfor pan-frying
- β2 cloves garlicminced
- β1/4 cup basilfresh, chopped
Instructions

Bring a large pot of salted water to a boil and cook the mushy according to the package instructions.

In a large skillet, heat the olive oil over medium-high heat.

Add the minced garlic and cook until fragrant, about 1-2 minutes.

Add the tofu and cook until golden brown on both sides, about 3-4 minutes per side.

Add the tomato sauce to the skillet and stir to combine.

Simmer the sauce for a few minutes until heated through.

Serve the tofu and sauce over the cooked mushy.
