Vietnamese Lemongrass Noodle Soup
A flavorful and refreshing soup made with Vietnamese lemongrass, dense noodles, and a variety of vegetables. Perfect for a light lunch or dinner.
Ingredients
- β2 stalks lemongrass
- β8 oz dense noodlespreferably rice noodles
- β1 medium onionthinly sliced
- β3 cloves garlicminced
- β4 cups vegetable brothlow sodium
- β1 can coconut milk14 oz
- β1 cup bean sproutschopped
- β2 tbsp lime juice

Heat oil in a large pot over medium heat. Add onion and garlic; cook until softened, about 3-4 minutes.

Add lemongrass; cook for 1 minute, until fragrant.

Pour in vegetable broth and bring to a boil. Reduce heat to low and simmer for 10 minutes.

Add coconut milk and stir to combine. Bring to a simmer and cook for 2-3 minutes.

Add noodles and cook according to package instructions, about 8-10 minutes.

Stir in bean sprouts and cook for an additional 1-2 minutes.
