Grilled Smoked Beef Skewers with Chimichurri

- β1 medium OnionThinly sliced
- β1 medium Bell pepperThinly sliced
- βn/a Zest of 1 lime
- β1/4 cup Fresh oreganoChopped
- β3 cloves GarlicMinced
- β1/4 teaspoon Red pepper flakes
- βto taste Salt
- βto taste Black pepper
- β2 tablespoons Olive oil
- β1/4 cup Fresh parsleyChopped

Preheat grill to medium-high heat.

In a large bowl, combine smoked beef, onion, bell pepper, lime zest, oregano, garlic, red pepper flakes, salt, and black pepper.

In a small bowl, whisk together olive oil and parsley.
