Keto Chicken Quesadilla
A twist on the classic, this keto version uses a low-carb tortilla and serves with a fresh side of salsa.
Ingredients
- β1 pound chicken breastboneless, skinless
- β1 low-carb tortillasee notes
- β1/2 cup quesadilla cheese
- β1 cup salsa homemade or store-bought
- β2 tablespoons avocado oil
- β salt
- β black pepper

Preheat a skillet over medium-high heat.

Season the chicken breast with salt and black pepper.

Cook the chicken for 5-6 minutes per side or until it reaches an internal temperature of 165Β°F (74Β°C).

Once the chicken is cooked, let it rest for 5 minutes before slicing it into thin strips.

Meanwhile, heat a skillet over medium heat and add the low-carb tortilla.

Place the cheese on half of the tortilla and top with the chicken strips.

Fold the tortilla in half and cook for 2-3 minutes or until the cheese is melted and the tortilla is crispy.

Flip the quesadilla and cook for another 2-3 minutes or until the other side is also crispy.

Serve with a side of salsa and enjoy!

To make the salsa, simply combine diced tomatoes, red onion, jalapeno, cilantro, and lime juice in a bowl and stir to combine.
