Japanese Spring Soup
A light and refreshing soup that combines the sweetness of nectarines with the savory flavors of a traditional Japanese broth.

- β2 tbsp Japanese Miso Pasteavailable at most Asian grocery stores
- β2 Dried Apricotschopped
- β4 cups Vegetable Brothlow sodium
- β1 tsp Soy Sauceoptional
- β1 Green Onionschopped, for garnish
- β1 tsp Sesame Oilfor serving

In a large pot, combine vegetable broth, nectarines, apricots, and miso paste.
