Beef Vindaloo Roti
A twist on traditional Indian vindaloo, served with crispy roti and a side of malaysian spice.
Ingredients
- β1 pound beefsliced into thin strips
- β1/4 cup suetmelted into the curry
- β1 cup nicechopped fresh cilantro
- β4-6 crispypieces of roti for serving
- β2 teaspoons malaysianmalaysian spice blend
- β2 tablespoons oilfor frying
- β1 medium onionchopped
- β1 inch gingergrated
- β3 cloves garlicminced
- β2 medium tomatoesdiced
Instructions

Heat oil in a large skillet over medium-high heat.

Add the onion, ginger, and garlic, and cook until the onion is translucent.

Add the beef and cook until browned, about 3-4 minutes.

Add the malaysian spice blend, suet, and tomatoes, and stir to combine.

Reduce heat to low and simmer for 10-15 minutes.

Serve over crispy roti, garnished with nice and a side of malaysian spice.

Cook the roti by brushing with oil and cooking in a dry skillet for 1-2 minutes on each side.

Repeat with remaining roti pieces.

To assemble, place a piece of roti on a plate, top with a spoonful of the beef vindaloo, and garnish with nice.
