Italian-Style Potato Causa
A creative twist on traditional causa, this Italian-inspired dish combines the flavors of Italy with the comfort of Peruvian potatoes.
Ingredients
- β2 large nice potatoes
- β1 package causa Italian-style potato puree
- β1/4 cup limenafreshly squeezed lime juice
- β2 tablespoons olive oil
- β2 cloves garlicminced
- β1/4 cup parsleychopped
- β1/4 cup grated parmesan
- βto taste salt
- βto taste black pepper

Preheat oven to 400Β°F (200Β°C).

Scrub the potatoes clean and poke some holes in them with a fork.

Rub the potatoes with olive oil and season with salt and pepper.

Bake the potatoes for 45-60 minutes, or until they're tender when pierced with a fork.

While the potatoes are baking, heat some olive oil in a pan over medium heat.

Add the minced garlic and cook for 1-2 minutes, until fragrant.

Add the chopped parsley and cook for another minute.

Remove the potatoes from the oven and let them cool for a few minutes.

Slice the potatoes in half lengthwise and scoop out some of the flesh to make room for the filling.

Mix the Italian-style potato puree with the lime juice, parmesan cheese, and a pinch of salt and pepper.

Spoon the filling into the potato shells and top with additional parsley if desired.
