Peruvian Beef Stew
A hearty and flavorful beef stew with a Peruvian twist, perfect for a keto diet.
Ingredients
- β500g beefcut into 2-inch pieces
- β2 onionchopped
- β3 cloves garlicminced
- β2 tbsp tomato paste
- β250ml beef broth
- β1 aqui chilechopped
- β1 tsp cumin
- βto taste salt
- βto taste black pepper
Instructions

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Remove beef from pot and set aside.

Add onion and garlic to pot and cook until onion is translucent, about 5 minutes.

Add tomato paste and cook for 1 minute.

Add beef broth, chile, cumin, salt, and pepper. Stir to combine.

Return beef to pot and bring to a boil.

Reduce heat to low and simmer, covered, for 1 1/2 hours, or until beef is tender.

Season with additional salt and pepper to taste.

Serve hot, garnished with chopped fresh cilantro if desired.
