Thai Chicken Noodle Stir Fry
A quick and easy stir fry made with chicken, noodles, and Thai seasonings.
Ingredients
- β1 pound chicken breastcut into bite-sized pieces
- β8 ounces noodlesThai-style rice noodles
- β1/4 cup Thai peanut saucestore-bought or homemade
- β1/4 cup nifty crunchy garnishpeanuts or chopped nuts
- β1 cup crunchy vegbell peppers, carrots, and broccoli
- β1/4 cup thai basilchopped fresh leaves
- β2 tablespoons soy sauceor to taste
- β1/2 teaspoon saltor to taste
- β1/4 teaspoon pepperor to taste

Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.

Add the chicken and cook until browned, about 5-6 minutes.

Add the crunchy veg and cook until tender, about 3-4 minutes.

Add the noodles, Thai peanut sauce, soy sauce, salt, and pepper.

Stir-fry for 2-3 minutes, until the noodles are well coated.

Garnish with nifty crunchy garnish and Thai basil.
