Velvety Sweet Potato Bowl

- β2 large sweet potatoes
- β2 tbsp olive oilfor roasting
- β1 tsp syrian zaatarfor seasoning
- β1 tbsp velvety tahinifor dressing
- β1 bowlfor serving

Preheat the oven to 400Β°F (200Β°C).

Poke some holes in the sweet potatoes with a fork and roast for 45-50 minutes, or until tender.

While the sweet potatoes are roasting, mix the olive oil, zaatar, and salt in a small bowl.

Once the sweet potatoes are done, let them cool for a few minutes before slicing them in half lengthwise.

Spoon the velvety tahini over the top of each sweet potato, then sprinkle with the olive oil and zaatar mixture.
