Thai Fish Nimono
Delicately flavored Thai fish curry made with nimono ingredients, perfect for a quick dinner.

Ingredients
- β4 Fish fillets (cod or tilapia)
- β2 cups Nimono
- β1/4 cup Garlicky sauce
- β2 tbsp Thai red curry paste
- β1 can Coconut milk
- β2 tbsp Fish sauce
- β1 tsp Sugar
- βhandful Thai basil

Instructions

Heat 2 tbsp of oil in a pan over medium heat.

Add the Thai red curry paste and cook for 1 minute, stirring constantly.

Add the fish fillets and cook for 2-3 minutes per side, until cooked through.

Add the nimono, garlicky sauce, coconut milk, fish sauce, and sugar to the pan.

Stir to combine and bring the mixture to a simmer.

Reduce the heat to low and let the curry simmer for 5-7 minutes, until the sauce has thickened.
