Tunisian Quesadilla
A fusion of Tunisian and Mexican flavors, this recipe combines the spices of Tunisia with the comfort of a quesadilla.
Ingredients
- β2 tsp Tunisian Spice Blend
- β1 tsp No-Nonsense Chili Powder
- β1 tbsp Rest of the Day Olive Oil
- β8 oz Meat, shredded chicken
- β4 Quesadilla Tortillas
- β8 oz Shredded Cheese
- β1/4 cup Chopped Cilantro
- β1/2 cup Sliced Red Onion

1. Heat the olive oil in a large skillet over medium-high heat.

2. Add the shredded chicken to the skillet and cook until heated through.

3. In a large bowl, combine the Tunisian Spice Blend and chili powder.

4. Add the shredded cheese, chopped cilantro, and sliced red onion to the bowl and stir until well combined.

5. Add the cooked chicken to the bowl and stir until well combined.

6. Place a tortilla in the skillet and sprinkle a quarter of the chicken mixture onto half of the tortilla.

7. Fold the tortilla in half and cook for 2-3 minutes or until the tortilla is crispy and the cheese is melted.

8. Flip the quesadilla and cook for an additional 2-3 minutes or until the other side is also crispy and the cheese is melted.

9. Repeat with the remaining tortillas and chicken mixture.

10. Cut the quesadillas into wedges and serve immediately.
