Beef Stew with a Canadian Twist
A hearty beef stew infused with the warm spices of the Canadian wilderness.
Ingredients
- β1 pound beef stew meat
- β1 medium onionchopped
- β2 medium carrotpeeled and chopped
- β2 large potatopeeled and chopped
- β2 cups beef broth
- β1 cup red wine
- β2 tablespoons tomato paste
- β1 teaspoon dried thyme
- β1 teaspoon dried rosemary
- β1 teaspoon salt
- β1/2 teaspoon pepper

Brown the beef in a large Dutch oven over medium-high heat.

Remove the browned beef from the pot and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the chopped carrot and potato to the pot and cook for an additional 5 minutes.

Add the beef broth, red wine, tomato paste, thyme, rosemary, salt, and pepper to the pot.

Return the browned beef to the pot and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 2 1/2 hours, or until the beef is tender.
