Canadian Taleggio Gratin
A rich and creamy Canadian-inspired gratin featuring the Italian cheese Taleggio.
Ingredients
- β1/2 cup (115g) Taleggio cheese
- β6 ounces (170g) Canadian bacon
- β2 tablespoons (30g) all-purpose flour
- β2 tablespoons (30g) unsalted butter
- β1 cup (240ml) heavy cream
- β grated nutmegto taste
- β saltto taste
- β fresh parsleychopped, for garnish

Preheat oven to 375Β°F (190Β°C).

Cook Canadian bacon in a skillet over medium heat until crispy, about 5-7 minutes. Set aside.

In a medium saucepan, melt butter over medium heat. Whisk in flour to make a roux, cooking for 1-2 minutes.

Slowly pour in heavy cream, whisking constantly. Bring to a simmer and cook for 5-7 minutes or until thickened.

Remove from heat and stir in Taleggio cheese until melted. Season with salt and nutmeg.

In a 9x13 inch baking dish, arrange Canadian bacon in a single layer.

Pour Taleggio cream over the bacon and top with a sprinkle of grated nutmeg.

Bake for 20-25 minutes or until the top is golden brown and the sauce is bubbly.
