Catalan Kabocha Wrap
A delicious and nutritious wrap filled with roasted kabocha squash and topped with a tangy Catalan-inspired sauce.
Ingredients
- β1 medium Kabocha squash
- β1 large Catalan wrap
- β2 tbsp Olive oil
- β1 tsp Catalan seasoning
- βto taste Salt
- βto taste Pepper
- β1/2 tsp Garlic powder
- β2 tbsp Lemon juice
- β1/4 cup Chopped fresh parsleyOptional

Preheat the oven to 400Β°F (200Β°C).

Cut the kabocha squash in half and scoop out the seeds.

Place the squash on a baking sheet, cut side up.

Drizzle with olive oil and sprinkle with Catalan seasoning, salt, pepper, and garlic powder.

Roast the squash in the preheated oven for 30-40 minutes, or until tender.

While the squash is roasting, prepare the Catalan-inspired sauce by whisking together lemon juice and olive oil in a small bowl.

Once the squash is done, let it cool for a few minutes before scooping it out of its skin and into a bowl.

Add the Catalan-inspired sauce to the bowl with the squash and toss to combine.

Warm the Catalan wrap by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

Spoon the squash mixture onto the wrap and top with chopped fresh parsley, if desired.
