Renkon Lotus Root Gratin
A creamy gratin dish made with renkon lotus root and topped with a crunchy french breadcrumb.
Ingredients
- β1 large renkon lotus rootpeeled and sliced
- β1 medium onionsthinly sliced
- β3 cloves garlicminced
- β1 cup gratin cheesegrated
- β1/2 cup french breadcrumbsgluten-free
- β2 tbsp vegetable oilfor brushing

Preheat the oven to 400Β°F (200Β°C).

In a large bowl, toss the sliced lotus root with 1 tablespoon of vegetable oil, salt, and pepper until coated.

In a greased 9x13 inch baking dish, arrange a layer of lotus root slices.

Sprinkle a layer of grated cheese and a sprinkle of breadcrumbs over the lotus root.

Repeat the layers two more times, ending with a layer of breadcrumbs on top.

Bake for 30 minutes or until the top is golden brown and the gratin is heated through.

Remove from the oven and let it rest for 10 minutes before serving.
