Creamy Kenyan Wrap
A flavorful and nourishing wrap with Kenyan spices and a creamy sauce.
Ingredients
- β1 Lime Tortilla Wrapgluten-free
- β1/4 cup Coconut Creamchilled
- β2 tbsp Lime Juicefreshly squeezed
- β1 tsp Kenyan Curry Powderadjust to taste
- β1/2 cup Chopped Cucumberthinly sliced
- β1/2 cup Cherry Tomatoeshalved
- β1/4 cup Fresh Cilantrochopped
- β1/4 cup Red Onionthinly sliced

In a small bowl, whisk together coconut cream, lime juice, and Kenyan curry powder.

Taste and adjust the seasoning as needed.

Lay the lime tortilla wrap on a flat surface.

Spread a quarter of the coconut cream mixture on the center of the wrap.

Add chopped cucumber, cherry tomatoes, fresh cilantro, and red onion on top of the cream mixture.

Gently fold the bottom half of the wrap up over the filling, then fold in the sides and roll up the wrap.

Cut in half and serve immediately.
