Traditional British Lentil Casserole
A hearty, comforting casserole filled with lentils and flavors reminiscent of the British countryside. Serve warm, garnished with fresh herbs.
Ingredients

- ●2 tablespoons Vegetable OilFor sautéing

- ●2 medium CarrotChopped

- ●1 can (14.5 oz) Canned Diced Tomatoes
- ●2 cups Vegetable Broth

Preheat oven to 375°F (190°C).

In a large saucepan, heat oil over medium heat.

Add onion, carrot, and celery; sauté until vegetables are tender.

Add mushroom and cook until tender.

Add lentils, diced tomatoes, vegetable broth, salt, and pepper.

Bring to a boil, then reduce heat and simmer for 30 minutes.

Transfer the mixture to a 9x13 inch baking dish.
