French Beef Bisque
A hearty and comforting French-inspired beef soup made with tender beef, rich vegetables, and a touch of cognac. Perfect for a cold winter's night.

- β1 large Onion
- β2 medium Carrot
- β2 stalks Celery
- β3 cloves Garlic
- β4 cups Beef Broth
- β2 tbsp CognacOptional
- β2 tbsp Tomato Paste
- β2 tbsp All-Purpose Flour
- β1 cup Heavy CreamOptional

Heat oil in a large pot over medium-high heat. Add the ground beef and cook until browned, breaking it up into small pieces as it cooks.

Add the onion, carrot, and celery to the pot and cook until the vegetables are tender.

Add the garlic and cook for 1 minute.

Add the beef broth, cognac (if using), tomato paste, and flour to the pot. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer for 10 minutes.
