Kenyan Lentil Stew

- β1 medium, chopped Onion
- β2 medium, peeled and chopped Carrot
- β2 tsp Curry Powder
- β2 tbsp Tomato Paste
- β4 cups Vegetable Broth
- β1 tsp Salt
- β1/2 tsp Black Pepper
- β2 tbsp Olive Oil

Heat oil in a large pot over medium heat.
