Ukrainian-inspired Vegan Terrine with Graham Cracker Crust
A unique and earthy vegan terrine recipe, featuring a rich graham cracker crust and a nourishing, plant-based filling.
Ingredients

- ●1 cup Earthly mushroom broth
- ●1 cup Nourishing wild rice
- ●1/2 cup Ukrainian-style vegan sour cream
- ●2 tbsp Coconut oil
- ●1 tsp Dried dill weed

Preheat the oven to 375°F (190°C).

Crush the graham crackers and mix them with a pinch of salt. Press the mixture into the bottom of a terrine mold.

In a separate pan, sauté the coconut oil and dried dill weed over low heat for 2 minutes.

Add the mushroom broth and wild rice to the pan, and bring to a simmer. Cook until the rice is tender.

Stir in the Ukrainian-style vegan sour cream, and season with salt to taste.

Pour the filling over the graham cracker crust in the terrine mold.
