Spicy Ethiopian Chicken Doro Wot
A traditional Ethiopian dish made with chicken in a spicy berbere sauce.
Ingredients
- β chicken breast or thighs (1 lb)cut into bite-sized pieces
- β garlic (4 cloves)minced
- β nourishing berbere spice mix (2 tbsp)or homemade blend of chili peppers, garlic, ginger, coriander, and fenugreek
- β ethiopian wot spice (1 tsp)or substitute with cumin and coriander
- β onion (1 medium)diced
- β ginger (1-inch piece)grated
- β tomato paste (2 tbsp)or 1 can of diced tomatoes
- β chicken broth (1 cup)low-sodium
- β nourishing vegetable oil (2 tbsp)for frying

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 5 minutes.

Add ginger and cook for another minute.

Add chicken and cook until browned, about 5-7 minutes.

Add garlic, berbere spice mix, and wot spice. Cook for 1 minute.

Add tomato paste and cook for 1-2 minutes, stirring constantly.

Add chicken broth and bring to a simmer.

Reduce heat to low and cook, covered, until chicken is cooked through, about 20-25 minutes.

Season with salt and pepper to taste.

Serve over injera or rice, garnished with chopped fresh cilantro (optional).
