Irish Nourishing Stew
A hearty and comforting Irish stew made with nourishing ingredients and potatoes. This stew is perfect for a cold winter night.
Ingredients
- β2 large nourishing potatoespeeled and diced
- β1 pound irish stew meatbeef or lamb, cut into 1-inch cubes
- β1 medium onionchopped
- β4 medium carrotspeeled and sliced
- β2 stalks celerychopped
- β2 tablespoons all-purpose flourfor thickening
- β2 cups beef brothlow sodium
- β1 cup waterfor thinning

Heat the oil in a large Dutch oven over medium-high heat.

Add the meat and cook until browned, about 5 minutes.

Add the onion, carrots, and celery, and cook until the vegetables are tender, about 5 minutes.

Add the flour and cook for 1 minute.

Gradually add the beef broth and water, whisking constantly.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours.
