Polish Blackeye Pea Pilaf
A hearty and nutritious pilaf dish made with blackeye peas, polish sausage, and a hint of spice.

- β1 pound Polish sausagecut into 1-inch pieces
- β1 cup dried Blackeye peasrinsed and drained
- β1 cup Pilafuncooked
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 teaspoon Saltto taste
- β1/2 teaspoon Black pepperto taste

In a large pot or Dutch oven, heat 2 tablespoons of oil over medium-high heat.

Add the Polish sausage and cook until browned, about 5 minutes.

Add the onion and garlic and cook until softened, about 3 minutes.

Add the blackeye peas, pilaf, salt, black pepper, and paprika.

Stir to combine, then add 2 cups of water.
