Beef Barbacoa Tacos
A flavorful and spicy beef barbacoa recipe served in tacos, perfect for a gluten-free dinner.

- β2 chipotle peppers in adobo saucediced
- β1 medium oniondiced
- β3 cloves garlicminced
- β2 teaspoons cuminground
- β1 teaspoon corianderground
- β2 tablespoons lime juicefreshly squeezed
- β1 cup beef brothgluten-free
- β1/4 cup cilantrochopped

In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat.

Add the beef chunks and cook until browned on all sides, about 5 minutes.

Remove the browned beef from the pot and set aside.

Add the diced onion and minced garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the diced chipotle peppers, cumin, coriander, and lime juice to the pot and cook for 1 minute.

Return the browned beef to the pot and bring the mixture to a simmer.
