Syrian Lentil Wrap
A hearty and flavorful wrap filled with spicy lentil mixture, perfect for a quick and healthy meal.
Ingredients
- β1 cup red lentilsrinsed and drained
- β1/2 cup onionchopped
- β2 cloves garlicminced
- β1 tsp cuminground
- β1 tsp corianderground
- β1 tsp paprikaground
- β2 tbsp tomato pastecrushed
- β1 large nourishing wrapor 2 small
- βto taste salt
- βto taste black pepper

In a large pan, heat 1 tablespoon of oil over medium heat.

Add the chopped onion and cook until softened, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the cumin, coriander, and paprika, and cook for 1-2 minutes, stirring constantly.

Add the crushed tomato paste and cook for 1-2 minutes, stirring constantly.

Add the rinsed and drained red lentils, salt, and black pepper.

Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

Warm the nourishing wrap by wrapping it in a damp paper towel and microwaving for 20-30 seconds.

Spoon the lentil mixture onto the center of the wrap, leaving a 1-inch border around the edges.

Fold the bottom edge of the wrap up over the filling, then fold in the sides and roll the wrap into a tight cylinder.
