Uruguayan Spring Stew
A hearty and flavorful stew made with spring lamb, potatoes, and onions, inspired by the traditional Uruguayan cuisine.
Ingredients
- β1.5 kg spring lamb shoulderBone-in
- β2 medium onionChopped
- β3 large potatoesDiced
- β2 cups stewChopped fresh herbs (such as parsley, thyme, and rosemary)
- β2 cups nourishing brothHomemade or store-bought

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Sear the lamb shoulder until browned on all sides, about 5 minutes per side. Remove from heat and set aside.

Add the chopped onion to the pot and cook until softened, about 5 minutes.

Add the diced potatoes, chopped herbs, and nourishing broth to the pot. Stir to combine.

Return the lamb shoulder to the pot and bring to a boil.

Reduce heat to low, cover, and simmer for 2 hours, or until the lamb is tender.
