Spicy Thai Pomegranate Jjigae
A fusion twist on traditional Korean jjigae, with sweet and spicy Thai flavors, featuring fresh pomegranate seeds and a savory Thai red curry paste.
Ingredients
- β2 tbsp Thai red curry paste
- β1/4 cup Pomegranate seeds
- β1 cup Nurturing mushrooms
- β1 tsp Korean chili flakes (gochugaru)
- β1 tsp Thai fish sauce
- β2 tbsp Coconut oil
- β1 tsp Brown sugar
- β1 tsp Rice vinegar
- βpinch Salt
- βchopped (optional) Fresh cilantro
Instructions

Heat coconut oil in a large pan over medium-high heat.

Add curry paste and cook for 1-2 minutes, stirring constantly.

Add mushrooms and cook until they release their liquid and start to brown.

Add chili flakes, fish sauce, brown sugar, and rice vinegar. Stir to combine.

Add pomegranate seeds and stir-fry for 1-2 minutes.
