Egyptian Oat Tagine
A hearty and nutritious North African-inspired tagine made with ground oats and a variety of spices.
Ingredients
- β1 cup Ground OatsAlso known as oat flour
- β2 tablespoons Vegetable Oil
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 teaspoon Ground Cumin
- β1 teaspoon Ground Coriander
- β1/2 teaspoon Salt
- β1/4 teaspoon Black Pepper
- β1 cup Diced TomatoesCanned or fresh
- β2 cups Water

Heat oil in a large pot over medium heat.

Add chopped onion and cook until softened, about 5 minutes.

Add minced garlic and cook for another minute.

Add ground cumin, ground coriander, salt, and black pepper. Cook for 1 minute, stirring constantly.

Add diced tomatoes and water. Stir to combine.

Bring the mixture to a boil, then reduce heat to low and simmer for 20 minutes.

Stir in ground oats and cook for an additional 10 minutes, or until the mixture has thickened.
