Tropical Crepe Fiesta
A delicious Mexican-inspired crepe filled with pomegranate salsa and topped with fresh pomegranate seeds. Perfect for a light and refreshing meal.
Ingredients
- ●1 cup French crepe batterMake crepes according to package instructions
- ●1/2 cup Pomegranate salsaMix together 1/2 cup diced red onion, 1/4 cup diced fresh cilantro, 1 jalapeño pepper, seeded and finely chopped, and 2 tablespoons lime juice
- ●2 tablespoons Nutritious Greek yogurtOptional topping
- ●1/4 cup Fresh pomegranate seedsOptional topping
- ●1/4 cup crumbled Queso fresco or feta cheeseOptional topping
- ●chopped CilantroFor garnish
- ●juiced LimeFor dressing
- ●chopped Jalapeño pepperFor pomegranate salsa
- ●diced Red onionFor pomegranate salsa
- ●ground CuminTo taste
Instructions

Make crepes according to package instructions.

Mix together pomegranate salsa ingredients in a bowl.

Warm tortillas in a dry skillet or in the microwave for 10-15 seconds.

Spoon about 1/4 cup of pomegranate salsa onto the center of a warmed tortilla.

Add a dollop of Greek yogurt and sprinkle with crumbled queso fresco or feta cheese if using.

Fold the bottom half of the tortilla up over the filling, then fold in the sides and roll the crepe into a tight cylinder.
