Mediterranean Meat Bowl
A flavorful and nutritious bowl filled with Mediterranean-style meat, vegetables, and quinoa. Perfect for a quick and easy dinner.
Ingredients

- ●1 cup Quinoa
- ●1 cup Cherry Tomatoes
- ●1 medium Cucumber
- ●1/2 medium Red Onion
- ●2 tablespoons Olive Oil
- ●2 tablespoons Lemon Juice
- ●1/4 cup Greek Yogurt
- ●1/4 cup Fresh Parsley

Preheat the oven to 400°F (200°C).

In a large bowl, combine the lamb, quinoa, cherry tomatoes, cucumber, red onion, olive oil, lemon juice, and salt. Mix well.

Transfer the mixture to a baking dish and bake for 25-30 minutes, or until the lamb is cooked through.

While the lamb is cooking, prepare the yogurt sauce by mixing together the Greek yogurt and lemon juice.

To assemble the bowls, place a scoop of the cooked lamb mixture onto a plate, followed by a dollop of the yogurt sauce and a sprinkle of fresh parsley.
