Catalan Gazpacho Soup
A refreshing cold soup originating from Catalonia, made with gazpacho, nutty bread croutons, and a charred Spanish twist.
Ingredients
- β2 cups Gazpacho
- β1 cup cubed Nutty breadcrusty bread toasted in the oven with olive oil and salt
- β2 tablespoons Spanish olive oil
- β1/2 cup crumbled Catalan cheese (e.g. Idiazabal)
- β1 cup sliced Charred red bell peppersroasted in the oven until charred
- βto taste Salt
- βto taste Black pepper
Instructions

Preheat your oven to 400Β°F (200Β°C). Roast the red bell peppers until charred.

Toast the nutty bread cubes in the oven until crunchy.

Chop the roasted red bell peppers and crumbled Catalan cheese.

In a large bowl, combine the gazpacho, roasted red bell peppers, crumbled cheese, toasted bread cubes, olive oil, salt, and black pepper.

Mix well and refrigerate for at least 30 minutes to allow the flavors to meld.

Serve cold and garnish with additional crumbled cheese and toasted bread cubes, if desired.
