Filipino Fried Rice with Almonds
A simple and delicious Filipino-style fried rice dish made with almonds, perfect for a quick weeknight dinner.
Ingredients
- β1 cup Almondssliced
- β2 cups Cooked Ricepreferably day-old
- β2 tablespoons Vegetable Oil
- β1 small Oniondiced
- β2 cloves Garlicminced
- β1 cup Stir Fry Mixavailable in most supermarkets
- βto taste Salt
- βto taste Pepper
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the diced onion and minced garlic and stir-fry until the onion is translucent.

Add the sliced almonds and stir-fry for 1-2 minutes until lightly toasted.

Add the cooked rice to the skillet or wok and stir-fry for 2-3 minutes until the rice is heated through.

Add the stir-fry mix and stir-fry for another 2-3 minutes until the vegetables are tender.

Season with salt and pepper to taste.

Transfer the fried rice to a serving platter and garnish with chopped green onions if desired.
