Keto Middle Eastern Shortbread Cookies
A crispy and nutty keto dessert inspired by the flavors of the Middle East. These shortbread cookies are made with almond flour and are perfect for a low-carb diet.
Ingredients

- ●1/2 cup (1 stick) unsalted buttersoftened
- ●1 tsp sugar-free vanilla extract
- ●1/4 tsp kosher salt
- ●1/2 cup chopped nuts (almonds or any other nuts you like)

Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.

In a large bowl, cream the butter and vanilla extract until light and fluffy.

Gradually add the almond flour, salt, and sugar-free sweetener to the butter mixture and mix until a dough forms.

Stir in the chopped nuts.

Scoop the dough into balls, about 1 tablespoon each.

Place the balls onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

Bake for 18-20 minutes or until the edges are lightly golden brown.

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Note: If you want a crisper cookie, bake for an additional 2-3 minutes.
