Dorayaki Pancake Cake
A traditional Japanese dessert made with dorayaki pancakes, filled with sweet red bean paste and topped with crispy almond flakes.
Ingredients
- β4 pieces dorayaki
- β1/2 cup red bean paste
- β1/4 cup almond flakescrushed
- β2 tablespoons sugar
- β1 tablespoon water
- β1 tablespoon butter
- β2 large eggs
- β1 cup all-purpose flour

In a large bowl, whisk together eggs, sugar, and water.

Add flour and whisk until combined.

Heat a non-stick pan over medium heat.

Add butter and swirl to coat the pan.

Pour 1/4 cup of the batter into the pan and cook until bubbles appear on the surface.

Flip the dorayaki and cook for another minute.

Repeat with the remaining batter.

To assemble the cake, place a dorayaki on a plate and spread a tablespoon of red bean paste on top.

Sprinkle with almond flakes.
